An eclectic mix of California cuisine and traditional Texas style BBQ
Our style of barbequing is unique in that we can combine the two styles and local popular cuts of meat. With over $10,000 in prize money from BBQ competitions I think we might have figured it out.
In Texas it’s all about the brisket and mesquite, in California it’s Tri-tip (aka rich man’s brisket) and black oak. The method of applying our seven spice dry rub and slow smoking Tri-tip, Ribs, Pulled pork or Whole Hog combined with our blackberry barbeque sauce may be rooted in the Deep South, but it is obviously Nor Cal.
We are also fortunate to have an abundant supply of fresh seafood here in Humboldt. Fresh caught Wild Salmon with Citrus Pesto, Albacore with Sesame teriyaki, halibut with lime cilantro grilled over oak and fruit woods are amazing.
We also offer many other varieties of grilled fare including Chicken, Steaks and Sausage.
For our vegetarian friends, we offer several choices including skillet sautéed Portabella Mushrooms Onions and Bell peppers (combined with Tri-tip is our signature dish), Portabella Pizza (giant stuffed mushroom), grilled vegetables, and various tofu dishes including shish-ka-bobs. We are very conscientious of keeping all vegetarian foods separate from meat entrees from farm store to table. We recognize the importance of vegetarian choices as well as other dietary restrictions. Please let us know if you or your guests require special considerations.
All of our salads, vegetable, and side dishes are made from scratch using the freshest ingredients, (organic & local whenever possible) using a collection of family recipes.
From elegant wedding presentations to good ol’ BBQ picnic; our services can adapt to your particular event. The sight and smell of the BBQ trailer (aka “The Beast”) onsite adds a wonderful festive atmosphere to your event, especially with those guests who have had the opportunity to sample our food at other events. Our main objective is to make your event a successful occasion that will be cheerfully talked about for years to come.
